Traditional biltong is made the way the old folk made it for centuries, simply salt, black pepper and hand roasted and ground coriander seeds. We add a small amount of brown sugar which makes a big difference. The meat is salted then marinated in a mixture of red wine vinegar and Henderson's Relish (vs Worcester sauce which contains two allergens, fish and barley). It is then air dried in the cabinet, each piece hand picked when its the ideal dryness. We like to think of it as gourmet biltong, not easy to lay your hands on these days.
