Why Our Biltong?
With over 40 years of experience from Natal Parks Board, South Africa to game farming in the central Kalahari in Botswana, we know biltong. We run a small family business from our purpose-built facility on the Dupplin Estate, on the River Earn 3 miles west of Perth, Scotland. We consider ourselves artisans, committed to producing genuinely authentic biltong based on hand roasted and milled spices:
- We use only grass-fed, fully traceable and sustainable, 100% Scottish Beef from third to eighth generation Scottish farmers
- Using only silverside, hand-picked for us with a good layer of yellow fat, we trim our meat to perfection, no scraps ever. We even use only prime silverside in our Drywors.
- We use our own simple and precise recipes honed over decades, providing a consistent result every time
- We hand roast and grind all our spices, providing a superb flavour profile unmatched by commercial spice
- Our recipes have no preservatives and no additives, just salt, spice and marinade, and is completely allergen free
- We have a five stage production process from raw meat to dry biltong, each stage carried out by hand
- Our purpose built facility has full approval from Scottish Environmental Health. We are trained in HACCP Manufacturing and Food Hygiene handlers and our product is laboratory tested in Dundee
