The spice mixture we blend here (hand roasted and ground) is the same that we use in Boerewors (farmers sausage). We like it thin to get it nice and dry (22 to 24mm sheep casings). Our recipe uses 10% beef fat which we consider ideal, just enough for flavour but not so much as to cause it to be greasy.
