Experience back in South Africa was that more often than not, chilli sticks/chilli bites use off cuts of meat not suitable for whole slabs of biltong. Not with us. In our pursuit of only offering you the finest biltong, we use the prime muscle of our 100% grass-fed Scottish silverside, perfectly trimmed of all connective tissue, which we cut into 10mm steaks cross grain (so easy to eat, no bull terrier tugging required) and then we cut them again into 10 x 10mm strips. These are marinated and the spiced with our standard biltong spice and a mild addition of chilli. Everything hand roasted, hand milled and with no additives or preservatives. We then dry it a bit more than biltong to 42% moisture (giving you more chilli sticks and us less cash :)) but still sell the product at the same price as everything else. No wonder it is hugely popular and we are very proud of this achievement.
